Ingredients
1 tbsp vegetable oil
½ cup (100g) red lentils
150g mushrooms cut into quarters
200g sweet potatoes cut into chunks
250ml water
1 vegetable stock cube
½ tsp mustard seeds
½ tsp cumin seeds
1tsp dried coriander leaves
½ tsp ground cumin
½ tsp ground coriander
½ tsp paprika
1 tsp curry powder
Method
Heat the pan. Dry fry the seeds until they start to smell a little toasty (approx 1 minute).
Add the mushrooms and cook until starting to go soft.
Add all the herbs, spices and the stock cube.
Add the sweet potato chunks and the lentils.
Stir to ensure everything is coated in the spices.
Add the water, cover and simmer for 15 minutes. If it starts to look too dry or thick, add a touch more water.
