This is one of my mum’s favourite recipes. I think it is from slimming world.

Takes: 45 minutes

Ingredients
2 tins baked beans
1 tin of chopped tomatoes
1 onion
1 red pepper
300g mushrooms
Mixed herbs
1tsp chili powder
2 cloves of garlic
Lasagne sheets
Grated low fat cheddar for topping
Method
Fry the onions, mushrooms, garlic and pepper for a few minutes.
Add beans, tomatoes, herbs and chili powder.
Layer the mixture with lasagne sheets, making sure the top layer is sauce, and bake for 30 minutes.
Add the cheese and bake for a further 5 minutes.
