Balsamic Chicken and Mushroom Pasta

Takes: 20 minutes
Serves: 3-4

Equipment
1 pan
1 large skillet or frying pan

Ingredients
200g dried pasta
1tbsp vegetable oil
1 large onion, finely chopped
1 bag mixed frozen mushrooms
8 balls of frozen spinach
200g (or so) of quorn chicken style pieces
1 carton of alpro single
1 vegetable stock cube
6tbsp balsamic vinegar
Some water (quarter cup roughly)
Salt to taste

Method
Put the pasta on to boil according to the instructions on the packet.
Meanwhile:
Heat the oil in the large skillet. Fry the onion until browned (burnt? Caramelized?)
Add the mushrooms, spinach, chicken pieces, stock cube and balsamic and lower the heat. Cover and leave until the pasta is cooked, stirring occasionally.
Add the alpro single, rinse out the carton with the water and add the creamy water also.
Drain the pasta and add to the sauce. Stir through and serve.
