Mushroom Bhaji

Equipment
A food processor with a slicing setting is helpful but not mandatory. If you don’t have one, add around 10 minutes to the prep time.

Ingredients
625g mushrooms (family pack from Tesco)
2 tsp mild curry powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp mild chili powder
1/2 tsp ground turmeric
1/2 tsp dried chili flakes (omit if you do not like spice)
2 tbsp tomato puree

Method
Slice the mushrooms thinly (a food processor makes easy work of this)
Add all the ingredients to a pan with a couple of tablespoons of water
Cook until the mushrooms have reduced down and have a thick coating of the spice
