Ingredients
1 bag of tesco frozen sweet potato
3 large carrots, chopped
2 red onions, chopped
1 tin of green lentils
180g of feta cheese, crumbled
1 bag of fresh rocket
1 tbsp of ginger puree
1 tbsp brown sugar
half a tsp of chili flakes
4 tbsp vegetable oil
2 tbsp balsamic vinegar
Method
- Heat your oven to 180C
- In a large bowl, combine the sweet potato, carrots, onions, ginger, sugar, chili and vegetable oil and ensure that everything is well mixed and coated.
- Put the veg and glaze mix into a large, deep, oven safe roasting tray (I used a lasagne dish) and put into the middle of the oven for 30 minutes.
- Gently warm the lentils on the hob while the veg are roasting.
- Once the vegetable mix is roasted, scatter the lentils over the top, then put the rocket on, then the crumbled feta, then drizzle over the balsamic.
Slimming world friendly: swap the sugar for sweetener, and the oil for fry light. One portion counts as a healthy A.
This keeps well in the fridge and is just as good cold the following day.
