Fake Steak Casserole

Proper hearty Sunday dinner material

Ingredients

  • 375 g miniature potatoes halved
  • 1 bag Quorn brand steak style strips
  • 300 g chestnut mushrooms quartered
  • 200 g peeled brussels sprouts quartered
  • 1 leek halved and sliced
  • 1 veg stock cube
  • 6 tbsp tomato puree
  • 2 tbsp dark soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp coriander leaf

Instructions

  1. pre-heat the oven to 180 degrees C

  2. boil the halved potatoes in salted water for 7 minutes

  3. meanwhile, add all the other ingredients to a stove-top safe casserole dish over a low heat with about 1/2 cup water and stir until mixed well

  4. add the potatoes and enough water to just cover everything

  5. put a lid on the casserole dish and put in the oven for about an hour

This is great served with some crusty brown bread from your healthy extra B choice (allow syns if you are not using your B choice for bread).
