
Crispy, marinated tofu and tasty roast veg come together to make a comforting TV dinner that can be enjoyed with anything.
Preheat the oven to 180 degrees C
Mix together all the marinade ingredients in a small jug
Dice the tofu into 1/2 inch cubes
Pull the cauliflower into florets
Slice and half the slices of the courgette
Put all the chopped veg with the marinade into a large bowl and mix thoroughly so that all the veg is coated
Transfer everything to a deep roasting pan
Roast for 45 minutes
Great served with a fresh leafy salad, or cooked bulgur wheat.
